50704 1950s HEALTH BENEFITS OF ICE CREAM & MAKING ICE CREAM PROMOTIONAL FILM

De Frenes & Company (an obscure ice cream producer based in Philadelphia) brings insight into the health benefits of ice cream, “America’s favorite dairy food,” in this late 1940s / early 1950s-era color promotional film. The film opens in a school cafeteria as a table of happy children enjoy bowls of vanilla ice cream, knowing that it’s “tops in in taste.” But few people know of what is involved in making ice cream. At mark 01:00 the camera gazes upon a field of grazing cows at a dairy farm. It is milk from cows such as these that ice cream will be made. A veterinarian is shown examining a bovine before attaching a modern milking machine (mark 01:40). Meanwhile workers clean canisters that will be used to collect and store the milk before it is delivered to a plant. At the plant (mark 02:12), workers are shown checking the liquid for freshness, then sampled for purity. In a laboratory setting, the film shows employees separating the cream from the milk at mark 02:30, before adding milk solids and sugars to the cream, and the mixture is pasteurized. Once homogenized the mixture passes over cooling coils, a process shown starting at mark 03:03, and natural and artificial flavors added. Cartons are shown being filled beginning at mark 05:00, where the cartons are sent to a freezer before being shipped. The camera then takes us inside a home where a housewife is shown preparing the dessert treat for her family (mark 06:25). The narrator explains that ice cream not only is tasty but also contains calcium, protein, and vitamins.
